September 2nd is only about two weeks away.

And why, you ask, could this date possibly matter?
Because September 2nd is Labor Day, the time to say goodbye to all things summery and white.

This leaves us with exactly twenty days to wear white pants. My favorite pair happen to be of the sailor variety…

This week also happens to be my very last week at home before I sail away to college and become a captain. (no pun intended, but this is REALLY my university’s mascot!)

Could there possible be a better time to wear these pants?
I didn’t think so.

Let’s start with the necklace.

Last Friday, I spotted this little gem in a gallery downtown. It has quickly became my favorite accessory! You can NEVER go wrong with vintage: tried and true blue is always a classic.

Buttons are some of my favorite things, and the very best way to hold pants in place. On this little number I get three on each side: the more the merrier!

I hope that the remainder of August is filled sun, smiles, and LOTS of ice cream.

corn, bacon, & peach salad

Last Friday, my mom came home from the farmer’s market with armloads of fresh produce.

And I was starving.

This predicament just so happens to be the perfect storm for a concoction…

After digging through the bags (hungry girl gotta eat!), I found three of my favorite things in the whole entire world: corn on the cob, farm fresh bacon, and perfectly ripe peaches.

Did I mention they were all at the peak of perfection?

Here is the end result, and the perfect summer salad…

(aka heaven)

corn, bacon, and peach salad


(makes 2 salads)

3 slices of bacon

1 ear of corn

1 medium, ripe, sliced peach

4 cups of mixed greens

2-4 tablespoons of honey balsamic dressing (see recipe below)

1/4 cup of crumbled goat cheese (optional)

Step 1: Bring a medium pot of water to a boil. Add the corn and boil, covered, 4-5 minutes.

Remove the corn from the boiling water when done.

Step 2: While the corn is cooking, fry the bacon in a skillet over medium heat, cooking on both sides until crispy.

Step 3: Slice the corn off the cob and crumble the bacon

Step 4: Divide the lettuce onto two plates and add the sliced peaches. Top with the corn, crumbled bacon, and goat cheese (if desired). Drizzle each salad with 1-2 tablespoons of honey balsamic dressing.

Honey Balsamic Dressing

1/4 cup of balsamic vinaigrette (Newman’s own is the BEST)

2 teaspoons of honey

1 teaspoon of dijon mustard

Step 1: (the first, last, and only step) Whisk all ingredients together and enjoy!

-try grilling the peaches and corn for a delicious, smoky flavor

-add grilled chicken for more protein


My concoction turned out to be wonderfully delicious AND┬ásuper healthy at the same time (a little bacon doesn’t hurt)!
