Last Friday, my mom came home from the farmer’s market with armloads of fresh produce.
And I was starving.
This predicament just so happens to be the perfect storm for a concoction…
After digging through the bags (hungry girl gotta eat!), I found three of my favorite things in the whole entire world: corn on the cob, farm fresh bacon, and perfectly ripe peaches.
Did I mention they were all at the peak of perfection?
Here is the end result, and the perfect summer salad…
(makes 2 salads)
3 slices of bacon
1 ear of corn
1 medium, ripe, sliced peach
4 cups of mixed greens
2-4 tablespoons of honey balsamic dressing (see recipe below)
1/4 cup of crumbled goat cheese (optional)
Step 1: Bring a medium pot of water to a boil. Add the corn and boil, covered, 4-5 minutes.
Remove the corn from the boiling water when done.
Step 2: While the corn is cooking, fry the bacon in a skillet over medium heat, cooking on both sides until crispy.
Step 3: Slice the corn off the cob and crumble the bacon
Step 4: Divide the lettuce onto two plates and add the sliced peaches. Top with the corn, crumbled bacon, and goat cheese (if desired). Drizzle each salad with 1-2 tablespoons of honey balsamic dressing.
Honey Balsamic Dressing
1/4 cup of balsamic vinaigrette (Newman’s own is the BEST)
2 teaspoons of honey
1 teaspoon of dijon mustard
Step 1: (the first, last, and only step) Whisk all ingredients together and enjoy!

-try grilling the peaches and corn for a delicious, smoky flavor
-add grilled chicken for more protein
My concoction turned out to be wonderfully delicious AND super healthy at the same time (a little bacon doesn’t hurt)!
